Good afternoon everyone! I hope you’re all well and excited for the weekend… I certainly am after a long week of coursework assignments!
So, my recipe for today! It’s fajitas! Now I love my fajitas, and I am the self proclaimed Gordon Fajita Ramsay. They are a simple, healthy, and filling.
To start with, cut one (red) salad pepper into fairly thin strips and wash it under tap water. Next cut yourself an onion to add some extra flavour (if you start crying thats normal!). Start cooking these in a pot with some butter, salt and paprika. While keeping an eye on your peppers and onions, so they don’t burn, dice 2 chicken breasts or a thin cut steak, or even some avocado depending on your preference. If you’ve chosen chicken or steak then marinate them with some salt, paprika, crushed garlic, a bit of pepper and then cook them in a small amount of butter (cooking times depend on the meat, cook thoroughly!). If you’ve chosen the avocado, add some salt, pepper and a small amount of oil and cook for a small amount of time.
Once your meat/avocado is cooked and your peppers and onions are slightly browned, mix them together thoroughly over the heat for an extra minute.
Lastly, grab some wraps, add some sour cream, cheese, and your meat/avocado, pepper, onion mix into the wrap and voila! Bon apetite, enjoy 🙂
I hope you enjoy this meal as much as I do! Remember to reap the benefits of home cooked, healthy food and let’s start the weekend the right way!
My quote for the day is related to something I’ve been trying to do more recently – “Some people around you will not understand your journey. They don’t need to; it’s not for them.” – Paulo Coelho
Sometimes it’s better to focus on yourself and your loved ones, keeping your circle small.
On that note, have a great weekend and most importantly, enjoy yourself!
See you on Monday!
